Carnival Night is one of the highlights of the week at Bolongo Bay Beach Resort in St. Thomas. Visitors staying at Bolongo Bay and other nearby hotels, as well as island locals, have been enjoying this Wednesday night party for over 30 years! The fun is all at Iggies Beach Bar & Grill, right on the beach at Bolongo.
Everything kicks off around 6pm with an impressive buffet of Caribbean specialties and American favorites. This is the only night of the week that the full menu isn’t available for dinner at Iggies, but the all-you-can-eat buffet is truly spectacular! There is something for everyone to enjoy; with local dishes such as seafood kallaloo, Johnny cakes and fried plantain, as well as roasted chicken with pineapple salsa, grilled fish, a carving station of roast beef and pork with a mango glaze, even hamburgers and Iggies’ delicious BBQ ribs, you won’t be disappointed!
There is live entertainment throughout the evening, led by the Sammy Watts Combo. Sammy and his band have been playing their fun mix of reggae, calypso and classic songs with an island twist for many years at Bolongo Bay. The carnival show begins at 8pm with a performance by a local Moko Jumbi stilt dancer, a conga line through the restaurant, and a dance contest! The finale is a fiery performance that includes flame eating, glass dancing, and the most impressive fire-filled limbo show around!
In addition to the great food, entertainment, and drink specials, vendors selling arts, crafts, jewelry and other locally made goods will be available throughout the night.
